Cake Recipe - Devil's Food Cake

The Cake

Ingredients:

• 50g cocoa powder
• 200ml boiling water
• 175g plain flour
• 1/4 teaspoon baking powder
• 1 teaspoon bicarbonate of soda
• 125g butter
• 300g caster sugar
• 2 beaten eggs

Method:

• Line & grease 2 x 8 inch sandwich tins.
• Blend cocoa with half the water until smooth. Stir in remaining water and leave to cool.
• Sift the flour, baking powder and soda together.
• Cream butter, sugar, and 3 tablespoons of cocoa mixture until mix is light and fluffy.
• Gradually beat in the eggs. Fold in the flour alternately with the rest of the cocoa mixture. The mixture may curdle at this stage but that doesn't matter.
• Evenly divide the mix between the cake tins and bake in a preheated oven of 180C/Gas 4 for 45-50 minutes until firm to the touch.   Leave in tins for 5 mins before turning cake out onto a wire rack to cool completely.

The Butter Icing

Ingredients:

• 1 tablespoon cocoa powder
• 1 tablespoon hot water
• 50g butter
• 125g sifted icing sugar

Method:

• Blend the cocoa with hot water and leave to cool.
• Beat the butter with half the icing sugar until light & fluffy.
• Add the cocoa mixture and the remaining icing sugar, beat until smooth. Sandwich the cake layers together with the icing.

The Fudge Icing

Ingredients:

• 50g butter
• 2 tablespoons milk
• 2 tablespoons cocoa powder
• 200g icing sugar

Method:

Put the butter, milk and cocoa into a saucepan and heat gently until it is all melted and mixed together. Allow to cool slightly, gradually adding the icing sugar. Beat the mixture until it is smooth, and then spread it over the top and sides of the cake.
