Recipe - Chocolate Shortbread
Ingredients:
- 175g plain flour
- 1 tablespoon cocoa powder
- 50g caster sugar
- 150g softened butter
- 50g fine chopped very dark chocolate
Method:
- Lightly grease a baking tray. Preheat the oven to 160C.
- Put all the ingredients into a bowl and beat together until they
form a dough. Knead dough lightly.
- Either - Press out dough into an 8 inch circle and pinch the edge
to form a scalloped edge. Prick circle all over with a
fork and mark into 12 wedges using a sharp knife.
- Or - Roll out dough to 1/3 inch thick and cut into biscuit shapes.
- Bake for 40 minutes until firm. Leave to cool slightly before cutting
the wedge
