Biscuit Recipe - Chocolate Shortbread

Ingredients:

  • 175g plain flour
  • 1 tablespoon cocoa powder
  • 50g caster sugar
  • 150g softened butter
  • 50g fine chopped very dark chocolate

Method:

  • Lightly grease a baking tray. Preheat the oven to 160C.
  • Put all the ingredients into a bowl and beat together until they form a dough. Knead dough lightly.
  • Either - Press out dough into an 8 inch circle and pinch the edge to form a scalloped edge.   Prick circle all over with a fork and mark into 12 wedges using a sharp knife.
  • Or - Roll out dough to 1/3 inch thick and cut into biscuit shapes.
  • Bake for 40 minutes until firm. Leave to cool slightly before cutting the wedge
